The fast-casual dining restaurant Hot Table Panini was founded in 2007 by brothers John and Chris DeVoie and restauranteur Don Watroba in Springfield, Massachusetts. Inspired by the Italian tavola calda, or “hot table,” the growing sandwich franchise built its reputation on made-to-order panini served with genuine hospitality, creating an environment where both guests and employees feel valued.

As the family-run franchise continues to expand across the Northeast, Hot Table Panini understands that every part of the guest experience matters, including the restroom. The National Restaurant Association identifies operational efficiency, technology investments, and delivering an exceptional guest experience as key priorities for today’s restaurant operators. Their decision reflects broader industry trends uncovered in a global survey conducted by leading marketing research firm MetrixLab. From the collective results of the survey emerged three primary, universal truths—no matter who you are or where you live:

  1. The number one concern—across all demographics and locations—is cleanliness and hygiene.
  2. 100% agree—a dirty restroom reflects poorly on the establishment. In fact, 80% of those surveyed said they would not, or might not, return to a restaurant with a dirty restroom.
  3. The number one contributing factor to a dirty restroom is paper towels on the floor or overflowing trash cans!

These findings reinforced Hot Table’s commitment to maintaining a clean, modern restroom that reflects the quality of its overall dining experience.

After this fast-casual dining restaurant switched from paper towels to XLERATOR® Hand Dryers, Hot Table Panini achieved over a 95% cost savings while reducing maintenance, waste, and labor. The results were so successful that XLERATOR became the franchise standard, allowing staff to spend more time serving guests instead of servicing restrooms.

As the franchise continued to grow, so did the brand and design. Always looking to improve, Hot Table continuously identifies ways to elevate and improve their guest experience and operational efficiency. Sustainability also played an important role in the company’s decision-making process. A recent Life Cycle Assessment (LCA) found that Excel hand dryers can reduce a facility’s carbon footprint by up to 94% compared to even 100% recycled paper towels, while also lowering water consumption, fossil fuel use, and overall emissions.
